In Ohio, one way you can tell its definitely summer is when home-grown berries come into season. My mom has always been obsessed with strawberries, so growing up, our fridge overflowed with berries all summer long. Strawberry shortcake is the quintessential food of my childhood in Ohio.
There are many different ways to prepare shortcake. Some are cake-y, some are crumbly. Some people serve their shortcake with whipped cream, milk, or simply just plain with berries. This shortcake is crumbly, super easy to make, and super delicious. My boyfriend totally loved it (yes, I have a boyfriend…more about him at a later date). I prefer to serve it the way my mother always has: a nice thick slice of shortcake, topped with a gracious portion of berries, a heaping spoonful of sugar, and topped with milk.
Bisquick shortcake:
- 2 1/3 cups Bisquick baking mix
- 3 Tbsp butter, melted
- 1/2 cup milk
- 3 Tbsp sugar
Heat oven to 425°F. Stir baking mix, melted butter, milk, and 3 Tbsp of sugar in a mixing bowl until soft dough forms. Press dough into a cake or pie pan. Bake for 10-12 minutes, until golden brown.
